1 medium diced yellow onion
1 large diced stalk celery
1 large diced carrot
1 tsp salt
1 Tb curry powder
2 C green or brown rinsed lentils
2 minced cloves garlic
1 can 15 oz diced tomatoes and juice
1 can 13.5 oz coconut milk
1 c veggie stock
juice of 1/2 lime
4-6 c hot rice
chopped fresh cilantro
In IP, saute add oil , onion, celery, carrot and salt. Cook til softened. Add curry, lentils, garlic, tomatoes and juice. Stir in milk and stock.
Pressure on high 5 min; let sit 10 min, QR. Stir in lime juice. Serve over rice. 4-6 servings.
