GF Mug Bread

GF Bread in a Cup

This was Good!

Grease a large cup. Add
1 large egg
1 tsp water
3 T buttermilk (or 3 T almond milk plus 3/4 tsp vinegar)
1/3 c GF baking mix
1 tsp sugar

Combine wet ingredients in cup then add dry and stir until well combined. Push dough down into cup and clean the surface of any extra batter.

Microwave 85 seconds. Can slice into three pieces or eat from the cup!

Variations:
Sugar & Spice - 1/4 tsp cinnamon plu 1 tsp extra sugar
Chocolate - 1 T chocolate chips
Cornbread - 1 T cornmeal, 2 T grated cheddar and 1 T green chilis
Italian - 1/8 tsp Italian herbs, 1 T parmesan
