Banana Bread GF


This one is a keeper!! Made it today and we ate nearly half of it warm out of the oven. Adapted from http://comfybelly.com

Ingredients
·       3/4 teaspoon baking soda
·       1/2 teaspoon salt
·       1/2 tsp cinnamon (or sprinkle cinnamon sugar on top of batter before baking)
·       3/4 cup (72 g) almond flour
·       1/4 cup (26g) pecan meal
·       2 tablespoons olive oil
·       3 eggs
·       1 cup (250 g) of mashed banana (about 2 very ripe bananas)
·       1 Tb maple syrup or honey (I used maple syrup)
·       3 Tb Monk Fruit
·       1/2 cup (about 60 grams) chopped walnuts, chocolate chips, or berries (optional) (I used pecans)
Method
1.    Preheat your oven to 350°F (175° C, or gas mark 4).
2.    Using a whisk or fork, blend all the dry ingredients together.
3.    Add the wet ingredients together, blend well, and then mix them into the dry ingredients.
4.    Grease the loaf pan. Add the batter to the baking dish.
5.    Bake for 40 minutes or until the top is browned and a toothpick inserted in the middle of the bread comes out clean.
6.    Cool and slice. Store sealed at room temperature for a few days, in the refrigerator for a few weeks, or freeze for a few months.
As for replacing the maple syrup or honey, a few readers have told me they use applesauce with great results (about 3 tablespoons of apple sauce, or up to 1/4 cup of applesauce).
