Another one I don't make too much because we eat too much of it! I think Mom got this recipe from a friend of ours, Pat Morris.
1 C yellow cornmeal
2 TB oil
½ tsp baking soda
½ tsp salt
1 tsp baking powder
½ C flour
1 C grated cheese
2 eggs
1 C creamed corn
1 can chopped green chiles
1 C buttermilk or sour cream
1 medium chopped onion
• Mix all ingredients well. Pour in a hot greased skillet, greased muffin pan, or 9x13" pan.
• Bake at 450° until golden brown. Will still be very moist when hot.
