Fruit Cake

This fruit cake recipe from My Grandmother makes a white, very-full-of-stuff cake that is better than the usual fruitcakes in the stores. I haven't made one in years - going to have to do it this Christmas!

1 lb. pitted dates
1 lb. shelled Brazil nuts
1 lb. candied cherries
1 lb. candied pineapple
1 lb. shelled pecans
Leave all fruits and nuts whole or half and pineapple in large bits.

Mix together:
1/2 C flour
1 1/2 C sugar
1 tsp baking powder
4 eggs

  1. Put fruits and nuts in bowl.
  2. Sprinkle dry ingredients over this and mix well.
  3. Line pans with buttered paper.
  4. Bake at 300 degrees for 1 1/2 hours.
  5. Don’t burn or let it get over brown. Makes 2 loaves.
