Blackened Fish

Serves 4

Mix together,
1 1/2 Tb Paprika
2 tsp Salt
1/4 tsp Cayenne Pepper
1/4 tsp Black Pepper
1 tsp Oregano
1 tsp Thyme
1 tsp Sugar

4 fish Fillets, washed and deboned (I used Baja)

2 Tbsp Butter, melted

Brush melted butter on both sides of the fish fillets. Then coat with the Cajun seasoning.

Heat dry cast iron pan or bbq grill. When very hot place fillets in and fry a couple minutes either side until cooked.

This was good with Blender Hollandaise Sauce.
