Cook rice - 1 cup rice, 2 cups water, bring to boil, cover and simmer 12 min.
Cook green beans.
1/3 cup almond or peanut butter
2 tsp honey
1/2 tsp salt or to taste
1.5 Tb soy sauce
1.5 tsp siracha sauce
2 Tb lemon juice
In large skillet, heat some olive oil and cook 1 lb chicken strips until no longer pink. Add beans, rice, 3/4 cup broth, and sauce. I also threw in some frozen spinach and some bean sprouts. Cook until broth thickens. You may garnish with chopped nuts and green onions.
