Moonshine Pie

From my Mom Velma Daulton
3 egg whites
6 Tb flour
3 cups milk
3 beaten egg yolks (optional)
3 beaten egg whites
1 ½ cups sugar
¼ tsp salt
½ stick butter
1 tsp vanilla
Beat 3 egg whites until stiff. Mix in a saucepan the sugar, flour and salt. Stir in gradually the milk, butter and 3 optional egg yolks. Cook, stirring constantly, until thick. Remove from heat and add vanilla. Pour hot filling over the beaten egg whites, stirring as you pour. Turn into 2 baked pie shells. When completely cool, sprinkle with grated coconut (optional). Keep in refrigerator.
